Origin Notes: Finca Milan sits in the hills of Pereira, Risaralda, Colombia, where producer Julio Cesar Madrid Tisnes is known for experimenting with advanced fermentation techniques. This lot uses a “culturing nitro fermentation” washed process: after pulping, the coffee ferments in a sealed tank with selected yeast and bacteria cultures while nitrogen is injected to precisely guide the fermentation curve.
Once fermentation is complete, the coffee is gently dried in solar dryers and finished in mechanical dryers for consistency. In the cup, that care shows up as intense strawberry jam, silky cane sugar sweetness, bright citrus highlights and a syrupy body that coats the palate. It’s an expressive, modern Colombian coffee that really pops as both filter and espresso.
